Along with gorgeous recipes, Mahle delivers tips and techniques for making the most of a small kitchen. Strategies such as “shopping” the pantry before going to the store, transforming leftovers into new meals, create vertical storage options, and buy utensils that nest all help create meals with maximum flavor in minimal space.

      From her boat's galley kitchen (where she has only a 2-by-3 feet countertop), food writer and chef Mahle offers a new take on cooking in a small space. She aims to help home cooks love even the tiniest kitchens, by emphasizing the importance of proper organization, offering space-saving tips for storage and multi-use equipment, and (for oven-less readers) demonstrating ways to cook with just a hot plate or toaster oven. Here, meal planning means buying smaller amounts and shopping more often, and one-bowl recipes reign supreme (like Mahle's watermelon, cucumber, feta, and mint salad). There are substitutions and workarounds for many recipes; ratios for scaling up to feed a crowd (with ginger-blackberry cr�me br�l�e, for example); and bright photography featured throughout. Mahle's reassuring voice will guide home cooks along the way.       While many of us have small kitchens, Mahle, who readers may have seen on Today, Throwdown! with Bobby Flay, and the Food Network, has most of us beat. Her kitchen is a galley on a Maine Windjammer (a 24-foot schooner). Even more impressive, Mahle regularly entertains groups of 24 people, making her first cookbook a true gift to those of us who have kitchen-space challenges. Mahle starts by breaking down how to organize your small space, including ditching mono-use tools, cooking without an oven, and grocery shopping to conserve every inch. Recipes utilize fresh ingredients prepared simply but packing big flavor. "Switch it Up!" tips highlight more ways to use the base recipe, reducing wasted leftovers, fridge space, and meal planning. There are plenty of veg offerings and fun, family-friendly ideas like desserts in a mug. This book is perfect for urban dwellers but also for RV campers, summer homes, and anywhere space is small but the desire for good meals is high.
